Homemade Granny Smith Applesauce


3 pounds organic Granny Smith apples
1/4 - 1/2 cup water
1-2 packets stevia, or to taste
1 tsp. cinnamon, or to taste

Peel, core, and chop or slice the apples into about 8 pieces per apple. Put the apples and water in a medium/large stainless steel pot.  Cover and cook over a medium/high heat until it comes to a boil. You will have to listen for the boil as the water will be buried by the apples. The water is only needed to keep the apples from sticking and burning on the bottom while the apples cook and make their own juice. When you hear the boil, turn the burner down to low and simmer until the apples are soft. When they are soft and "saucey" turn off the burner, and stir the stevia and cinnamon into the apples. This is good served warm or cold as a side-dish or dessert and keeps for many days in the refrigerator. It also freezes well.
